Peanut Butter Cookies
Makes about 56 cookies
Ingredients:
- 1 cup peanut butter
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup granulated sugar (white sugar)
- 1 cup packed brown sugar or 1/2 cup honey
- 1 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
Directions:
- In a large bowl, beat together peanut butter, butter, and shortening with an electric mixer for about 30 seconds.
- Add sugars, baking soda, and baking powder and beat until combined, scraping down the sides of the bowl regularly.
- Beat in eggs and vanilla until combined.
- Beat in as much flour as you can and then stir in the rest until fully combined.
- Cover and chill for an hour or until the dough becomes easy to work with.
- Preheat your oven to 375°F
- Shape dough into 1 1/4-inch balls and roll to coat with additional granulated sugar.
- Place 2 inches apart on ungreased cookie sheets.
- Flatten with the tines of a fork
- Bake for 7 to 9 minutes or until the bottoms turn light brown
- Let cool on the cookie sheet for a minute before transferring them to a cooling rack.
